Monaco’s hotel industry is one of the most active
sectors when it comes to protecting the environment.
Following the signature of the environmental charter
created by the Hotel Industry Association and signed by all partners in 2007,
“Green Teams” were formed within hotels to develop and implement concrete
solutions to reduce their ecological footprint. The main areas for improvement
are water consumption, energy savings and recycling.
The commitment of hotels is confirmed by the
environmental certifications and labels that they hold.
More than 82% of the Principality’s hotel rooms are
currently certified, under the following main schemes:
The hotel industry restated its commitment
alongside the Tourist and Convention Authority and the Mission for Energy
Transition by signing the National Energy Transition Pact in March 2018. Hotels
which have signed the Pact now account for 96% of the Principality’s available
capacity.
Hotel de Paris 
The
Monte-Carlo SBM group has been pursuing an ambitious certification policy for
several years now. A number of the group’s hotels already hold Green Globe
certifications and the recently renovated Hotel de Paris is working to achieve
the standard itself in the near future.
The hotel
signed the National Energy Transition Pact in March 2018, under which it has
committed to focusing on critical energy transition issues: waste management,
transport and, above all, customer empowerment.
With regard
to food waste, Monte-Carlo SBM has adopted the “Gourmet Box” concept, a
tailored version of the “Petite Boite Monégasque”, a box that enables diners to
take any unfinished dishes home with them.

Hotel Hermitage
Monte-Carlo
Like the
Hotel de Paris, the Hotel Hermitage Monte-Carlo is working to obtain the Green
Globe environmental certification.
The hotel
has signed the Mr Goodfish commitment to treat maritime resources with respect
and focus on sustainably caught fish.
The hotel
signed the National Energy Transition Pact in March 2018, under which it has

transport and, above all, customer empowerment.

Hotel Métropole
Monte-Carlo 
“Green
Attitude” is one of the strengths of the Hotel Métropole, an establishment
which is environmentally friendly and keen to reduce its impact in order to
preserve biodiversity.
The
Métropole Monte-Carlo holds the Green Key and TripAdvisor Ecoleader
certifications, and signed the Energy Transition Charter in March 2018.
The hotel’s
restaurants have been certified by Mr Goodfish and are committed to serving
only sustainable seafood. They also combat food waste by offering a tailored
version of the Petite Boite Monégasque.

Hotel Monte-Carlo
Beach
Having
obtained Green Globe certification in 2014, the hotel was then awarded the
prestigious Green Globe Gold Standard accolade in 2018, in recognition of its
daily efforts to manage its energy and water resources more carefully, offer
healthier, more environmentally friendly food, and take action to raise
awareness and partner with charities on joint projects.
For
example, the hotel is committed to energy conservation and now offsets its
electricity consumption by purchasing the equivalent amount of renewable
energy. In terms of clean transport, the Monte-Carlo Beach has its own fleet of
electric vehicles and a private electric bike station.
The Monte-Carlo Beach is home to Elsa, a gastronomic restaurant with full Ecocert organic and wild-caught fish certification. Chef Mélanie Serre’s "cooking from the heart" is all about the highest quality produce, harmony of flavours and colours, generous yet understated. Everything on the menu at Elsa is organically sourced and carries the “AB” organic farming label.
The Monte-Carlo Beach has signed up to the National Energy Transition Pact and the Responsible Restaurant scheme.

Hotel Fairmont Monte
Carlo
As a
signatory to the National Energy Transition Pact, the Fairmont Monte-Carlo
works on a daily basis to conserve resources, optimise energy management (the
hotel has four heat pumps which generate energy and supply the hotel with air
conditioning and heating), minimise water consumption and boost recycling.
The Hotel
Fairmont Monte-Carlo has also signed up to the Prince Albert II Foundation’s
Wood Charter.
Méridien Beach Plaza
The
Méridien Beach Plaza is Green Key-certified and has signed the National Energy
Transition Pact. The hotel is also an EcoPartner on TripAdvisor.
Monte-Carlo Bay Hotel
& Resort
Like the
Monte-Carlo Beach, the Monte-Carlo Bay Hotel and Resort obtained the Green
Globe Gold Standard certification in 2018, having been Green Globe-certified
since 2014.
The hotel
has succeeded in reducing its energy expenditure by 30% in just eight years and
continues to pursue its environmental commitment by marrying quality of
service, competitiveness and energy management. The Monte-Carlo Bay Hotel and
Resort is also equipped with a Smart + box which measures its energy consumption,
and photovoltaic panels, which will produce around 170,000 kWh/year, are set to
be installed on the hotel’s roof.
Sustainable
development is also part of the approach in the hotel’s kitchens thanks to Chef
Marcel Ravin, who uses fruit and vegetables from the hotel’s 400 m2 organic kitchen garden managed by Terre de Monaco.
A charter
has also been drawn up with Mr Goodfish to ensure that maritime resources are
treated with respect, using a list of all the recommended species for each
season.
The
Monte-Carlo Bay Hotel and Resort has signed the National Energy Transition Pact
and is a TripAdvisor Ecoleader.

Hotel Ambassador
Monaco
The hotel
has signed the National Energy Transition Pact.
Hotel Columbus
Sustainable
development is a key concern for the hotel.
A signatory to the National Energy Transition Pact, the Hotel
Columbus has also been an Ecowatt PACA ambassador since 2012, as part of which
it is committed to reducing its energy consumption in the event of an alert
during periods of high electricity usage.
The hotel is
linked up to the SEAWERGIE network, a heating and cooling generation plant
connected both to the waste treatment plant and to an underground seawater
pumping station built into the Fontvieille sea wall.
The Hotel
Columbus is listed on the WAYAJ site, the first app designed to help travellers
find and book hotels which have developed an environmental policy. It is also a
TripAdvisor Ecoleader.

Hotel Novotel
Monte-Carlo 
Novotel Monte-Carlo was awarded "Green Key" certification in 2024, in recognition of its commitment to sustainable tourism.
