Responsible Gastronomy

A stay in Monaco just wouldn’t be the same without an unforgettable gastronomical experience. Fortunately, the selection of culinary delights on offer in the Principality is rich, varied, and…  responsible. From “l’étoilé” to the Brasserie, the local restaurants are committed to sustainable development, with many being awarded official certifications.
 

THE RESPONSIBLE RESTAURANT CERTIFICATION

In February 2019, the Department of the Environment launched the Responsible Restaurant certification for restaurants and takeaway food outlets. Like the Responsible Trading certification, the Responsible Restaurant certification aims to highlight the best practices employed by restaurant owners in the Principality of Monaco. Reducing plastic waste, sorting and combatting food waste are key to this initiative. The certification is awarded by the Responsible Trading team and partner organisations receive personalised support.
Since 1 October 2020, certifications have been geolocated via the YourMonaco app. 

THE “Mr.GOODFISH” CERTIFICATION

Mr.Goodfish is a European programme aimed at raising awareness among the public and industry professionals about sustainable consumption of seafood products. The Mr.Goodfish is a hallmark of quality for all consumers. It can currently be found in France, Spain, Monaco, Italy, and soon other countries. The idea is to alert the fishing industry and consumers to the fragility of our marine ecosystems, by offering simple and positive solutions. If each French person ate a species recommended by Mr.Goodfish just once a year, some 18,000 tonnes of endangered species could be spared.

VEGANS AND VEGETARIANS  

Fruit and vegetables offer an incredible palette of flavours, just asking to be combined to make delicious dishes.
Vegan cuisine is hugely varied, and increasingly popular. The creative possibilities are endless, and almost every dish has a plant-based equivalent. Vegan and vegetarian cuisine are also known to have a smaller carbon footprint, so avoiding animal products is a great way to reduce your impact on the planet. To provide for every dietary preference and to address the environmental concerns of all, numerous restaurants in Monaco now offer vegan and vegetarian options (see list here).

A RESPONSIBLE GASTRONOMIC RESTAURANT

Elsa, at the Monte-Carlo Beach, is a gastronomic restaurant with a strong sustainable approach reflected in its pro-biodiversity actions. Ingredients and wines are sourced from carefully selected producers, with an emphasis on local, seasonal produce.
The Monte-Carlo Beach has signed up to the National Energy Transition Pact and the Responsible Restaurant certification.

THE ORGANIC GARDEN AT THE MONTE-CARLO BAY & RESORT

Sustainable development is also the order of the day in the kitchens of the Monte Carlo Bay and Resort, thanks to Chef Marcel Ravin who prepares fruit and vegetables grown in the hotel’s own 400 m² organic garden, managed by Terrae. The Monte-Carlo Bay Hotel & Resort has signed up to the National Energy Transition Pact and is a TripAdvisor Ecoleader.

MONACO COMMITS TO THE FIGHT AGAINST FOOD WASTE

Since 2013, the Principality has been actively committed to cutting food waste and is involved in a number of campaigns aimed at institutions and industry professionals.
One of the flagship initiatives by the collective MEG (Monaco Committed to Fighting Waste) is the creation of “La Petite Boîte” (the Monegasque version of a doggy bag!). At partner restaurants, customers can ask for a Petite Boîte in which to take home unfinished dishes and/or bottles.
